About Thai Short Rib Curry

The centrepiece of som saa’s latest menu is a punchy Thai green curry with braised short rib and seasonal vegetables. A labour of love, the som saa chefs make every element of their renowned curries in-house, from the curry pastes to the coconut milk.

To begin the process for their short rib curry, the beef is ‘salted’ in fish sauce. ”This is a technique used in Thailand for both preserving and flavouring meat” head chef Mark Dobbie explains, “we use free-range, Belted Galloway beef short rib from Swaledale Butchers, which we sit in fish sauce overnight, to give an extra boost of umami and depth of flavour to the meat.” The beef is then oven-braised in coconut milk and aromatic spices, resulting in beautifully tender, coconut-caramelised meat, which is taken off the bone, sliced into generous chunks, and folded into the fragrant green curry sauce.

For the sauce, green curry paste is made up of shallots, garlic, three kinds of chilli, coriander roots, roasted shrimp paste, galangal, lemongrass and a blend of spices, ground together between large granite stones. The paste is cooked down with house-made coconut cream and seasoned with coconut palm sugar and fish sauce, before makrut lime leaves and seasonal British vegetables from Flourish Farms are added, along with the short rib. The dish is then garnished with Thai basil and served with ethically sourced jasmine rice.

A refreshing papaya salad (som tam) sits alongside the main. som saa’s version of this Thai favourite is made with shredded green papaya, green beans and cherry tomatoes, flavoured with a punchy mix of chilli, fish sauce, tamarind and lime juice, topped with crunchy, deep-fried, prawns (called gung siep) and peanuts. A beautiful balance of salty, sweet, spicy and sour, this fresh, lively salad is the perfect accompaniment to the rich beef and creamy, coconut curry sauce.

Finish with a comforting cup of sweet, oolong tea toasted with sticky rice.
