About Osso Buco Feast

Angela Hartnett’s northern Italian–inspired festive feast centres around one of Cafe Murano’s most popular dishes – a rich, hearty osso buco with traditional risotto Milanese.

Start with tomato-topped focaccia with Italian Pepe olive oil for dipping, and arancini filled with mushrooms, a hint of Italian white truffle and a melting cheese centre. Next, there's delicate, cured Scottish monkfish and a winter salad marrying sweet, roasted heritage squash with bitter leaves, creamy gorgonzola and toasted walnuts. There’s also torn Italian mozzarella with a confit shallot, hazelnut and barrel-aged balsamic vinegar pesto.

For the main event, Angela braises HG Walter veal in chianti, house-made chicken stock, vegetables, rosemary and thyme until meltingly tender. It’s served on a bed of golden, risotto Milanese – a classic pairing for osso buco, made with saffron, white wine, stock and carnaroli rice.

Rounding out the feast is Angela’s festive Italian twist on a British favourite – panettone bread and butter pudding, served with pistachio crème anglaise and crunchy candied pistachios. For a final touch of decadence, Angela includes four of her rich, house-made dark chocolate truffles, dusted in bitter cocoa powder.
