For Easter weekend only, a feast to feed 4-6 people with a centrepiece of a whole Brecon lamb shoulder on the bone.

About Easter Lamb Banquet

‘This is a menu designed for leftovers,’ says Cam Emirali and pauses, ‘a whole weekend of leftovers’. Opening his Easter banquet are two flaky caramelised onion tarts, each of them a meal in their own right, brimming with torn burrata, artichoke, roasted peppers and olives, and dressed with nutty wild garlic pesto.

The centrepiece, a whole shoulder of lamb on the bone, marinated in garlic and rosemary and braised down in its own liquor for 5 hours, is ‘more than enough for the next day’. The lamb sits atop a salad of warm spring cabbage and peas tossed with picked mint and is accompanied by golden roast potatoes, parsnips, lamb jus, purple sprouting broccoli and a creamy anchovy parfait.

Surely, by this time, with zips undone, dessert is a hazelnut dacquoise, a mess of meringue and lemon curd, rose-scented rhubarb and crème fraîche. Created with the true spirit of Easter feasting in mind, this is a meal to come to hungry.
